RECIPE

 
Chocolate Chip Cookies for use with the Mickey Mouse Cookie Cutter !
Thhis is my own recipe and must NOT be used to make commerical cookies.
 
10 oz plain flour (all-purpose)
1 teaspoon baking soda
1/4 teaspoon salt
4 oz Demerara or Brown Sugar
2 oz white sugar
2 Large eggs (out of the shell !)
8 oz Butter (salted for preference) melt in microwave till just soft.
2 teaspoons Vanilla Extract
I Packet Chocolate chips or 10 oz broken dark chocolate (small pieces)
 
Warm up your oven to 300 degrees (medium heat)
 
In a BIG bowl put the chocolate chips (no tasting !)
then sieve the flour baking soda and salt on top and mix with a wooden spoon or balloon whisk
In another medium size bowl mix the butter and sugar till they go smooth like a paste.
Add the eggs and vanilla and mix until everything is blended in
 
Add the flour & Choc Chip mixture to the butter & sugar and mix with a hand mixer Do Not overmix. It should still stick together a little.
 
Take a baking sheet  greased thinly with butter and drop a tablespoon of mix (not too heaped up !) on to it.
Then do lots more about 2 and 1/2 inches apart.
(You might need two trays if you put them far apart)
This is because the mixture spreads and they tend to stick together if too close to each other.
Put the cookie cutter over each blob of dough and push gently down till it touches
the side (you may have to wipe bits off).
 
Put the tray of cookies in the oven.
You can put nice toppings  like chocolate shavings or icing sugar on too - or sprinkles for a party !
 
Dont forget to take the cookie cutter off before you put them in the oven.
After about 15 minute take a peek and see if they are done.That will fdepend on your oven.
When cooked gently ease them off baking tray with a spatula.
Do not eat all at once  !
(that is a LOT of sugar !)
 
There is a LOT of sugar in these ...
Now wash the cookie cutter .
